Mary Ellen Schaffer, age 85, passed away, Thursday, January 7, 2016 at Villa Maria Nursing Home. Mary Ellen F. Westby was born April 18, 1930 in Crosby, ND to Emil and Edith (Anderson) Westby. On December 18, 1965 she was united in marriage to Frank J. Schaffer. She worked for Sears and after retirement she enjoyed traveling with friends. She always had a pet dog and enjoyed listening to Elvis and sitting outside in the sun, admiring her flower garden. In December of 2012 she moved to Villa Maria. She is survived by her daughter, Paula (David) Kneip, Fargo, ND; son:, Duane Olesen, Washougal, WA; grandchildren: Matthew (Julie) Kneip and their children, Emily and Sarah, Maggie Kneip, Christina Eames, and one sister, Grace Olesen, Crosby, ND. Preceded in death by her Husband Frank; and sister, Beverly Jacobson The family of Mary Ellen would like to thank the wonderful staff of Villa Maria. In lieu of flowers, memorials preferred to Hospice of the Red River Valley. Visitation will be from 6:00pm to 7:00 pm with a 7:00pm Prayer Service at Boulger Funeral Home on Thursday, January 14, 2016.

  1. It was a pleasure knowing and taking care of Mary Ellen. I so enjoyed her sense of humor and oh how she loved her coffee and music of all kinds but especially Elvis. She knew every word to every song. She will be missed!

    We are sorry to hear about Marys passing. Its a blessing for Mary. Now she doesn’t have to suffer anymore and is in a better place with Frank, Beverly, her parents and other loved ones. Mary lived a good life and enjoyed it. We stopped a couple times and visited Mary at the Villa Maria Nursing Home. Mary was starting to look more like mom the older she got. I’m so glad we took the time to go visit Mary. Shirleys youngest son and my daughter are attending NDSU this year. So we were able to get to Fargo.
